Maybe I’m biased—tis the season and I love the season—but I think Tonx has a perfect coffee for the holidays on their hands.
Their latest coffee shipment is tasting great out of the v60o. True to Tonx’s stated intent, sweetness prevails in the cup. But I’m also of the mind to say that there is some subtle spiciness happening as well: cloves and cinnamon. Nothing is overpowering at all—not the sweetness, not the spice. Balance and harmony. Zen coffee.
For the nerd inside you:This first cup was brewed on the V60 using my normal, quite fine grind (a little finer than I use for a normal cone filter), a 1 minute pre-infusion, a little swirl on the pour in the beginning to integrate the water and the grinds but after that, slow and straight into the center.

Winner? The Chemex, for me. A few votes for the V60 as well. Fruity and herbal flavors paramount.
A long time ago in a land far, far away I mentioned that I might be writing a post about my experience with the Clever Dripper at some point in the near future.
Well, that “near future” has come and gone. In fact, we are now in what you might call the far distant future. At least in terms of the amount of time that has passed since I let my intent be known. Ah well, such is the life of the amateur blogger.
So, now, at long last, let me say a few things about my experience with the Clever:
Yeah, “yum”. The Clever has loads of potential to make that bag of finely sourced, roasted and presented bag of beans into a very tasty cup of coffee with very little effort. Especially when compared to other drip/cone methods.
All of the coffee I have made using the Clever has been the most consistently excellent coffee I have had at home…er, I mean in “The Lab”. I’ve made good cups with all of the methods at my disposal, to be sure. Day-after-day, though the Clever has been the most reliable method of getting the most out the beans I buy.

The cart is gone. The Remedy storefront is open. Ritual coffee and probably the last Clover in the San Francisco Bay Area that doesn’t exist in a Starbucks. Nice folks. Great coffee. Another fine addition to the East Bay’s stock of coffee bars.
